I made pumpkin bread ove...This cake looks amazing! I made pumpkin bread over the weekend and it was gone overnight. Granted, I did send some w/ friends.. but the other 2 loaves? ALL ME. Good thing they were "minis."<br /><br />Definitely going to make this. I can't do straight cream cheese frosting (too high in sodium) but I bet I could wangle a suitable variation. Great call w/ the healthy version. Though truth be told, I'd suck the less healthy one for breakfast lunch & dinner without guilt. I'm a rebel.
